Broccoli & Cheddar Square

These broccoli and cheddar squares make the perfect snack or breakfast. Did I mention that they’re gluten free? I’m always trying to find snack options that are gluten free and this one is a must try! What I love about this recipe is that it’s packed with protein, carbs and fat, making it a balanced snack or breakfast. These are great to make in advance and pop into your freezer. Take them out whenever you’re in a pinch for a quick breakfast or snack on the go.

 

Ingredients

2 cups of broccoli, chopped into small pieces

3 green onions, chopped

½ cup cheddar cheese

2 tsp grated parmesan cheese

2 eggs lightly beaten

1 cup oat flour

1 tsp baking powder

1 tsp salt

¼ cup butter melted

2 tsp olive oil

1 cup milk

¼ cup water

Directions

  • Heat a skillet to medium and add olive oil and broccoli. Let this cook for 5 minutes and add green onion. Let this cook for a few minutes and add a bit of the water to help the broccoli cook. Let this cook for 5-10 minutes until tender, adding more water if needed (the water will help the broccoli soften and cook quicker). Once this has cooked and the veggies are tender, set aside in a bowl.
  • Preheat oven to 375 F and lightly grease a baking dish with olive oil (or a fat of your choice).
  • In a large bowl mix the flour, baking powder and salt. Add the milk, eggs, butter and mix together. Add in the broccoli mixture and cheese. Stir to combine. Transfer the batter to your baking dish and sprinkle the parmesan cheese on top. Bake for 40-45 minutes or until golden. Remove from the oven and let cool for 15 minutes.
